Modern Mandelbrot




I recently started making Mandelbrot for Shabbat and it has been a real hit - the girls love it especially. This recipe makes quite a lot and I always find that even with 5 people in the house it last for a few days - and that is very unusual!!


MANDELBROT:

Ingredients:-
1 cup unsalted pareve margarine or butter, softened
1 cup, plus 2 teaspoons sugar
4 eggs
1 teaspoon vanilla
1/2 cup orange juice
4 cups all purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 cups choc chips
1 cup grated coconut
1/2 cup chopped almonds
1/4 teaspoon ground cinnamon


Method:-

I use a kitchen mixer to make this recipe although it could be made without a mixer.

1. Preheat oven to 350F (about 180C)
2. Cream together margarin and 1 cup sugar.
3. Add eggs one at a time, mixing well in between each addition.
4. Add vanilla and orange juice, mix well.
5. In another bowl mix together the flour, baking powder and salt, then add to margarine mix and mix well.
6. Add choc chips, coconut and almonds and mix in well.
7. Grease 3 bread pans, put the dough in them evenly and bake for 30 - 40 mins until done.
8. Cool and carefully cut into 1/2 inch slices.
9. Turn oven up to 400F (about 200C)
10. Arrange mandelbrot slices on a baking sheet. Mix the cinnamon and 2 teaspoons sugar and sprinkle over the top.
11. Brown in oven for a few minutes until golden.

Should make about 36 cookies.

Ha! Thank you for posting this recipe. I feel totally vindicated now. See, I asked my mother for my grandmother's mandel bread recipe. I followed the recipe to a T and it did not come out the way I remember my grandmother's coming out. I distinctly remember my grandmother baking the mandel bread twice but that instruction wasn't in the recipe my mother gave me, and she insisted that it was the exact recipe she was given by my grandmother. But, now I see I was right and that my mother must have copied the recipe wrong. Ha!
